Across from the local ALDI, Alkaline awaits.
Alkaline is where traditional meets modern, blending the tradition of ramen with a new contemporary feel.
Opened in 2018, this local Filipino-owned restaurant is decorated with neon red signs, black and white graphic art plastered walls, and satisfying music.
Plus, it has its own take on cutting-edge ramen dishes, including the Tonkotsu.
Tonkotsu Ramen
This creamy, pork broth was the perfect blend of rich, and savory flavors. The ramen came garnished with pickled ginger, scallions, a sous vide egg, narutomaki and shredded pork. The ginger provided a nice vinegary, spicy kick which correlated well with the peppery taste from the scallions. The pork was tender and cooked perfectly, bringing a satisfying texture to the dish.
Overall the flavors from the various ingredients made this a very comforting ramen dish. 10/10
